Putting stuff in wooden barrels to make them taste awesome is nothing new. The technique has been around for hundreds of years through wine & spirit making. We managed to get our hands on a couple of 200 litre Buffalo Trace bourbon barrels and they smell exquisite. No, that is an understatement. Next level coconut, corn syrup and honey, baking spice complexity. Fun fact: Dominique actually created a barrel aged hot sauce when she was working at Alta Bistro that they used in their dishes. The results were next level awesome.
Using organic BC chilies from our pals we’ve made at the farmers markets, this hot sauce will knock your socks off! These peppers have been fermented whole and then carefully blended with a medley of vinegars to create a vibrant “Tabasco style” spicy sauce. Complex, vibrant and fresh.
